Armagh Stewed Apple and Cream Pudding

Cream Pudding Ingredients 

  • 345g Whipping Cream
  • 100g Caster Sugar
  • 60g Mascarpone Cream 
  • 1 Vanilla Pod
  • 2 Gelatine Sheets

Method

  1. Set the gelatine sheets in cold water
  2. Boil cream with sugar and vanilla pod
  3. Add mascarpone cream and whisk 
  4. Squeeze the gelatine and add it into the cream mix, whisk until dissolved 
  5. Pour into the silicone mould and set into freezer

Stewed Apple Ingredients

  • 500g Armagh Apples 
  • 250ml Apple Juice 
  • 50g Caster Sugar 
  • 5g Cider Balsamic Vinegar
  • 5g Lemon Juice
  • 5g Ground Cinnamon 

Method

  • Put all the ingredients together into a pot and reduce slowly
  • Stew until golden brown
  • Remove from heat and allow to cool
  • Serve on top of your Cream Pudding and enjoy
